Very mochi waffles

Mochi waffles have been gaining more and more popularity here in the west coast. My favorite mochi waffle is served at Cha Eighteen, a mini tea shop in the Santa Anita Westfield mall in Arcadia. It is sooooo good. Very warm and chewy.

There are actually two different types of mochi waffles: a moffle and a maffle.

A moffle is made by heating up mochi sticks in a waffle iron. They're just okay. It is a "blank canvas" (this is how everyone describes it) in terms of the kind of flavors you'd want for your moffle. But without adding anything, really a moffle is nothing but chewing.

Now maffles are far superior. They taste more like a waffle but with a mochi mouth feel. This is because maffle batter is basically waffle batter that uses mochiko flour (sweet rice flour). It is REALLY good. And if you're not very good at making things from scratch, sellers on Amazon actually have maffle mixes for sale.

Just looking at all the maffle pictures makes me really want one. And I've always wanted to try and make them from scratch. So with mochi waffles in mind, I went to my sister's place again over the weekend. She has a waffle maker (I actually got it for her as a house warming present a few years back... yes this one).

Ingredient List
3/4 cup of AP flour
1 cup + 1/2 cup of mochiko
1/4 cup of sugar
1/2 cup of milk
1/4 cup vegetable oil
2 large eggs
4 tsp baking powder
pinch of salt
+ more sugar for dusting

Mix all the dry ingredients and all the wet ingredients separately. Then dump all the dry ingredients into the wet at once and mix. Apply cooking spray onto the waffle iron and scoop some maffle mix. Turn waffle maker button on and flip.

 The waffles turned out pretty tasty. Very chewy. Although Cha Eighteen waffles are hands down the winner... wonder what kind of recipe they follow. 

Also protip. If you're using one of those fancy hotel waffle makers, keep the waffle cooking just a bit longer than the preset fancy machine cooking time. Crispy goodness!

  1. Why does it say 1 cup + 1/2 cup of Mochiko? Do you mean 1 1/2 cups?

  2. Had to add approximately another cup of liquid due to the amount of dry ingredients. Other than that, it was delicious!
